Loved at markets and in the press
Why it tastes different
Nothing added, nothing taken out. Just honey that is gently strained and jarred while it still smells of the field.
Cold-extracted below hive temperature, so the delicate floral aromas stay in the jar.
We only remove wax flakes. The pollen and texture stay, which is why it slowly crystallises.
Every jar comes from our hives in one valley. No imports, no blends, fully traceable.
The apiary
Our family has kept bees at Hollow Oak for three generations. The hives sit among clover, linden and wild thyme, far from crops and roads. We only take the surplus honey, leaving the bees plenty for the winter.
From hive to jar
Our bees gather nectar from wild clover, thyme and linden all season long.
We wait until the bees seal each cell with wax, the sign the honey is ripe.
Frames are spun cold by hand, then the honey rests so air bubbles rise.
Poured into glass jars, labelled with the harvest date and shipped to you.

You can actually taste the flowers. It has ruined supermarket honey for me forever, in the best possible way.

Good questions
That is crystallisation, a natural sign of raw honey with its pollen intact. To make it runny again, stand the jar in warm (not hot) water for a few minutes and stir.
Honey keeps for years when the lid is closed and the jar is stored at room temperature, away from direct sun. We print a best-before date two years after harvest.
Honey of any kind should not be given to babies under 12 months. For older children and adults it is a lovely everyday sweetener.
You pay once for six jars. We send two jars from each new harvest, three times through the year, and you can move a delivery date by replying to any email.
Orders are jarred and shipped within 24 hours on weekdays and usually arrive in 2 to 4 business days, carefully padded so the glass stays safe.
